Indonesian Fried Rice


- 3 cups cooked jasmine rice (preferably day-old rice)
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 2 eggs, beaten
- 1 cup diced chicken, shrimp, or tofu (optional)
- 1 cup mixed vegetables (carrots, peas, bell peppers, etc.)
- 2 tablespoons soy sauce
- 1 tablespoon sweet soy sauce (kecap manis)
- 1 teaspoon shrimp paste (optional)
- Salt and pepper to taste
- Sliced cucumbers, tomatoes, and fried shallots for garnish
- Lime wedges for serving
- Sambal or chili sauce (optional) for extra heat


1. Heat the vegetable oil in a large pan or wok over medium heat.
2. Add the minced garlic and chopped onion to the pan and cook until fragrant, about 1-2 minutes.
3. If using, add the diced chicken, shrimp, or tofu to the pan and cook until browned and cooked through.
4. Push the ingredients to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix them with the other ingredients in the pan.
5. Add the mixed vegetables to the pan and cook until they are tender but still crisp.
6. Add the cooked rice to the pan, breaking up any clumps with a spatula. Stir-fry everything together for a few minutes.
7. Pour the soy sauce, sweet soy sauce, and shrimp paste (if using) over the rice. Mix well until the rice is evenly coated with the sauces.
8. Season with salt and pepper to taste.
9. Continue to cook, stirring occasionally, until the rice is heated through and slightly crispy, about 5-7 minutes.
10. Remove the pan from the heat and transfer the fried rice to serving plates.
11. Garnish with sliced cucumbers, tomatoes, and fried shallots.
12. Serve hot with lime wedges and sambal or chili sauce on the side, if desired.
